Shashuka with Sweet Potato Hash

I got a mini cast iron skillet a few months ago, but have been a little intimidated to actually use it. I knew I wanted to do a shashuka recipe, which originated in Northern Africa.

I thought this would be a perfect breakfast for Valentine’s.  An elegant, easy, one dish breakfast that is pretty hard to screw up.

Shashuka is really popular in the Middle East and Mediterranean.  Simple ingredients make up this tasty blend of tomatoes and eggs.  Something that everyone has on hand.

I put a little twist on it to up the carbs by adding sweet potatoes to the mix.

This recipe is total breakfast goals!  Great for brunch with the gals, or for that special someone.  Or, if you are single this Valentine’s Day – make yo’self a fancy breakfast!

I made it single serving.  But, you can totally multiply the recipe and make it more family-style too!  If you’ve seen the fridge space I have to work with, you know I don’t have a lot of room for big meals. :(
